Vanilla Ice Cream Cookie Sandwiches
INGREDIENTS FOR THE ICE CREAM
2 cups half-and-half cream
1 cup heavy (35 per cent) cream
1 cup sugar
1 vanilla bean, split and seeds extracted
FOR THE COOKIES
1 cup all-purpose flour
¼ cup quick cooking oats
½ tsp baking soda
A pinch of salt
½ cup unsalted butter, softened
½ cup white sugar
½ cup brown sugar
1 tsp vanilla extract
½ cup chocolate chips
1 Mix all the ice cream ingredients in the bowl of your ice cream maker and prepare according to its instructions.
2 Preheat the oven to about 160C and line a few baking sheets with parchment paper.
3 In a medium bowl, whisk together the flour, oats, baking soda and salt.
4 In a large bowl, cream the butter and sugars. Blend in the vanilla extract and egg. Slowly add in the flour mixture until nearly combined. Add in the chocolate chips and stir until the dough is uniform in colour and chip distribution.
5 Drop onto the prepared baking sheets, spread into round shapes and bake for 11 to 13 minutes, until lightly browned. Place on a wire rack to cool.
6 Top each cookie with 2 tbsp of vanilla ice cream and close with another cookie to make a sandwich.
