LEFTOVER TURKEY PIES
Use up everything you already have to hand and just add pastry to make this comforting main that your mates will love
2 tbsp unsalted butter
2 cloves garlic, minced
1 small onion, diced
2⁄3 cup frozen corn kernels
½ cup frozen diced carrots
½ cup frozen peas
1⁄3 cup all-purpose flour
1 cup of chicken stock
¼ cup milk
1 tsp fresh thyme leaves
Salt and pepper, to taste
2 cups chopped leftover turkey
1 puff pastry sheet, cut into four 10cm squares
1 large egg, beaten
1 Preheat oven to 195C.
2 Lightly grease four single-portion ramekins.
3 To make the filling, melt the butter in a large frying pan set over a medium-high heat.
4 Add the garlic, onion, corn, carrots and peas and cook, stirring occasionally, until the onions become translucent, about two minutes.
5 Whisk in the flour until lightly browned, about one minute.
6 Gradually whisk in the chicken stock, milk and thyme, and cook, whisking constantly, until slightly thickened, about one to two minutes.
7 Stir in turkey and season with salt and pepper, to taste.
8 Divide the filling evenly into the ramekins.
9 Top with puff pastry and gently cut four vents into the top of the crust. Brush each crust with the beaten egg.
10 Place the pies into the oven and bake until the crust is golden brown, about 20 minutes.
11 Allow to cool for five minutes before serving.
SESAME PASTRIES WITH LEFTOVER TURKEY
Try your hand at these delicious little bites, which make great canapés too!
1 sheet of ready-rolled puff pastry
1 tbsp sesame seeds
200g cooked leftover turkey, cubed
200g stuffing, cubed
3 tbsp crème fraîche
A good grind of black pepper
12 tsp cranberry sauce
1 egg, beaten, to glaze
1 Preheat the oven to 200C and lightly grease a 12-hole muffin tin.
2 Combine the turkey, stuffing, crème fraîche and pepper in a bowl.
3 Roll out one pack of pastry so that it is 2-3mm thick.
4 Using a large cookie cutter, cut out 12 discs from the dough.
5 Place each disc in a hole in the muffin tin, moulding it to fit.
6 Fill each pastry case with the turkey and stuffing mixture.
7 Top the turkey mixture with a teaspoon of cranberry sauce.
8 Glaze with the beaten egg and sprinkle with sesame seeds.
9 Bake in the oven for about 25 minutes, until the pastry is golden brown
10 Once cooked, allow the pastries to cool in the tin for a few minutes before transferring to a wire rack.
Leftover Turkey Kebabs served with Herb relish and salsa
Give that bird a makeover with these special skewers
16 pieces of thickly sliced leftover turkey breast
2 ripe avocados, halved
4 Roma tomatoes
16 strips of beef bacon
Salt and pepper, to taste
FOR THE HERB RELISH
3 or 4 whole dried chillies
2 cloves of garlic, crushed
½ bunch of mint, chopped
½ bunch of oregano, chopped
½ cup fruity olive oil
Salt, to taste
Lime juice, to taste
FOR THE SALSA
3 cups chopped tomatoes
½ cup chopped green capsicum
1 cup onion, diced
¼ cup minced fresh coriander
2 tbsp fresh lime juice
4 tsp chopped fresh jalapeño peppers (including seeds)
½ tsp ground cumin
½ tsp salt
½ tsp ground black pepper
YOU WILL ALSO NEED
16 short skewers
1 Prepare the relish by grinding the chillies with the seeds in a grinder.
2 Add a couple of tablespoons of boiling water to soften them.
3 Transfer the chillies to a bowl.
4 Add the chopped herbs, garlic and salt. Mix thoroughly to combine.
5 Add half a cup of olive oil and a good squeeze of lime to the mixture and stir together. If the mixture is very thick or too spicy, add more olive oil. Set aside.
6 For the salsa, combine the tomatoes with the green capsicum, onion, coriander, lime juice, jalapeño pepper, cumin, salt and pepper in a bowl. Set aside.
7 Take each avocado half and remove from the skin with a large spoon, keeping the fruit of the avocado intact. Cut each half into quarters. Set aside.
8 Cut each tomato into quarters and remove all the seeds. Set aside.
9 Lay each strip of bacon flat.
10 Place the turkey strip on top to fit each bacon strip.
11 Top the turkey with one piece of avocado and tomato.
12 Season with salt and pepper, to taste.
13 Thread the strips onto skewers.
14 Cook the skewers on a medium-hot grill until the bacon is fully cooked.
15 Serve with the relish and salsa.
