Tomato Soup
Mosaico's Tomato Soup




1 kg canned peeled tomatoes

1 clove garlic, minced

1 onion, chopped 

500ml water

Salt and pepper, to taste 

1 tbsp sugar

150g cream cheese or crème fraiche

Extra-virgin olive oil

Chopped chives, to garnish



1. In a pan, fry the onion and garlic in extra-virgin olive oil. Mix in the tomato, salt, pepper, sugar and  water and cook slowly for 30 to 40 minutes until the soup is a deep red colour. Adjust seasoning.

2. Garnish with a spoonful of cream cheese and chopped chives
