4 extra-large eggs
2 large everything bagels
4 slices of beef bacon, fried until crisp, and drained
2 slices of Monterey Jack cheese
3 spring onions, chopped
1 tbsp mayonnaise
1 tsp butter
Sea salt and freshly ground black pepper, to taste
1 Sauté the spring onions with just a pinch of sea salt. Set aside.
2 Fry the eggs in in the butter in a frying pan set over a low heat.
3 Lay the fried bacon on top.
4 Add the spring onions and the cheese and allow to melt in the pan.
5 Meanwhile, toast the bagels. Once toasted, spread with mayonnaise.
6 Lay the fried eggs mixture on top of the bottom half of the bagel.
7 Sprinkle with more spring onions if desired. Close with the top half of the bread and serve.
