4 cups couscous, steamed
4 tbsp icing sugar
¼ cup sugar
1 cup sultanas
1 cup almonds, blanched, peeled and fried
4 tbsp rose water
2 tsp cinnamon, powdered
1. Soak the sultanas in hot water for 10 minutes then drain and mix them with the couscous. Add the rose water and sugar, and mix well.
2. Blend ¾ cup of almonds with 1 tsp of cinnamon and 2 tbsp of sugar.
3. Sprinkle the couscous with the almond mixture.
4. Garnish with cinnamon, icing sugar, almonds and rose petals.
