Healthy Recipe: Stir-Fried Tofu
Stir-Fried Tofu

5 bird’s eye chillies, chopped

8 garlic cloves, chopped

100ml vegetable stock

280g hard tofu, cubed

80g string beans, diagonally cut in 5cm lengths

160g straw mushrooms, halved

120g baby corn, cut diagonally in 5cm lengths

21⁄2tbsp soy sauce

2tbsp oyster sauce

11⁄2tbsp honey

3 red and green chillies, seeded and finely sliced

4 handfuls of basil leaves

In a heavy wok, stir-fry the bird’s eye chillies and chopped garlic using just half of the vegetable stock. Set the stock to one side. Once fragrant, add tofu, string beans, straw mushrooms and baby corn and cook for several minutes. Moisten with remaining vegetable stock and season with soy sauce, oyster sauce and honey. Add sliced chillies and basil. Remove from the wok from the heat and serve with brown rice.

Chillies have positive effects on blood pressure, circulation and the metabolism. Rich in vitamin C, red chillies are a useful circulatory stimulant that can reduce the risk of cardiovascular disease. The larger the chilli the milder the flavour. Bird’s eye chillies are small and therefore very hot.
