Healthy Recipe: Stir-Fried Seafood With Chilli Paste
8 garlic cloves, chopped
1tbsp fresh red chilli paste 250ml vegetable stock
120g king fish, cubed
120g prawns, depeeled and de-veined
80g fresh squid cut into 1cm wide rings
20g green peppercorns
4tbsp oyster sauce
3tbsp miso paste
2tsp unsweetened black soy sauce
2 red and green bird’s eye chillies, sliced
2 handfuls fresh basil leaves
In a heavy wok, stir-fry chopped garlic and chilli paste over a low to medium heat, gradually add a third of vegetable stock. Then add king fish, prawns, scallops and squid and stir over a high heat. Add peppercorns and season with oyster sauce, miso paste, honey and unsweetened black soy sauce. Add remaining vegetable stock, sprinkle with sliced chillies and basil leaves and remove from heat. Serve with brown rice.
