Steak with Onions


4 beef tenderloin steaks             
4 onions, cut into rings
2 tbsp lard                               
2 tbsp butter
1 tsp salt                               
1L beef stock
½ tsp pepper
White vinegar, to taste

Pickled cucumbers
French-style green beans
Baked potatoes

1. Slash the fat edges of the steaks to prevent curling.
2. Melt the lard in skillet. Add the steaks, sear for 2 to 3 minutes on each side until browned on the outside but still slightly pink inside. Season with salt and pepper. Set aside, keep warm.
3. Add the onions to the skillet with the meat juices, sauté until golden. Set aside.
4. Wipe the skillet clean and add the butter. Add the onion rings and stir to coat with the melted butter.
5. Add the stock and bring to a boil. Add the vinegar to taste. Pour the sauce over the steaks. Serve hot with pickled cucumbers or French-style green beans and baked potatoes.
