
Smoked Salmon Focaccia
Classic salmon and cream cheese in this gourmet sandwich from Chef David at Al Maha
Makes 1
INGREDIENTS
120g smoked salmon
100g fresh focaccia bread
80g cream cheese
5g chives, chopped
Coarsely ground black peppercorns, to taste
10g red onion, sliced
10g rocket salad
10g black olives
5g capers
5ml readymade French dressing
METHOD
1. Slice the focaccia in half.
2. Arrange the raw red onion slices evenly on one slice. Then top with the smoked salmon.Mix the cream cheese with the cracked black peppercorns and chopped chives and spoon over the smoked salmon.
3. Place the other slice of focaccia on top and slice diagonally.
4. Mix the rocket with pitted black olives, capers and dressing and serve on the side.
