Opening three major restaurants in the space of six months was a major achievement. I then needed to ensure my brand Omnia became an instantly recognisable name in the culinary arena. 
Omnia Gourmet, Omnia Blue and Omnia by Silvena have taken over my life. I haven’t taken a day off in the last 14 months!
I surround myself with people who fan my flames, who inspire and ignite me! I spend my time only with very few people, but they are my world.
My only regret? I should have moved to Dubai 20 years ago. I intend to ensure Omnia encapsulates the true spirit of Dubai. I want to continue celebrating this amazing city via Omnia’s food and art (our eL Seed calli-graffiti wall is a major statement). 
Organic, sustainable and local are not just buzzwords. For me they are the ethos on which my brand is based.
It’s full steam ahead! I intend to open two more incredible eateries in the next eight months. By the end of 2015 I want my portfolio to encompass five outposts.
