Shrimp Rice Paper Rolls
8 large deveined and cooked prawns
2 tbsp chopped Thai basil
3 tbsp chopped mint leaves
3 tbsp chopped coriander leaves
2 lettuce leaves
½ small carrot
½ small cucumber
A handful bean sprouts
8 ready-made rice paper rolls
Ready-made hoisin sauce
1. Julienne the lettuce, carrot and cucumber into fine matchsticks.
2. Soften the rice paper rolls in hot water and lay them flat.
3. Arrange the veggies and herbs in the centre of the rice paper, leaving space to tuck in the edges. Top with a prawn and roll together.
4. Serve with hoisin sauce.
