Shangri-La Dubai’s seafood restaurant Amwaj has created dishes to match Dubai artist’s Altamash Urooj’s photography of the human body together with natural and man-made elements to form striking abstract images. Chef de Cuisine Marcello Mereu brings his Japanese experience to life with dishes such as cherry tomatoes stuffed with scallop mousse and black wild rice and some lime foam - the vibrant colours match the art perfectly! Well, it will certainly encourage food for thought!
