Seaweed salad with orange dressing




110g avocado, wedges

100g ripe papaya or banana, diced 

100g cherry tomatoes, halved

50g fresh coriander leaves

50g toasted sesame seeds

50g basil leaves

150g iceberg lettuce, washed

100g goma wakame (available in the Japanese section of Choithrams and Spinneys)  

20ml rice vinegar

10g honey

5ml sesame oil

10ml fish sauce

10ml orange juice

10g chilli, chopped

10g ginger, chopped

10g garlic, chopped



1. To make the dressing: mix the rice vinegar with the honey, fish sauce, orange juice, sesame oil and the chopped garlic, chilli and ginger. 

2. To assemble the salad: combine the lettuce, papaya or banana, avocado, cherry tomato, wakame and herbs and toss with the dressing. Check seasoning and top with toasted white sesame seeds.
