Tori No Su – meaning ‘bird’s nest’, in case you were wondering – features modern décor with dim lighting and interesting living grass walls that conspire to create a warm ambiance. In terms of signature Japanese techniques, Tori No Su covers it all with a teppanyaki counter, sushi bar and robatayaki station. Satiate your thirst with a tei-en – a refreshing mocktail of apple, kiwi and juice garnished with shisho leaf  it’s time to dine, put your fate in the hands of the chef in the spirit of omakase (“I will leave it to you”). The chef surprises with both on- and off-the-menu items, including tender grilled abalone and hoki (fish from the hake family) cooked to perfection with crispy skin. The nikuja, (Japanese-style beef stew) is marinated for hours and slow cooked, making it deliciously succulent with a subtle sweetness. The sushi is top quality, the buttery tuna sashimi being a highlight. For dessert, opt for the deep-fried rice ball with red bean paste in the centre served on top of crushed pineapple; it’s beautifully light and not overly sweet.
