There’s no doubt head chef Darren Velvick has big shoes to fill after the massive success of Nick Price and Scott Alvis, but I can confidently say he’s doing that and more. From starter to dessert (or three!) his plates are beautifully constructed – top-quality seasonal ingredients are treated with the utmost respect to celebrate their natural, clean flavours.
The starter of goat’s cheese, watercress and onion catapulted us into what we knew would be an exceptional meal. The goat’s cheese was served whipped and creamy on a bed of grassy watercress sauce, accompanied by onions two ways: crispy straws and caramelised. The melding of flavours and textures was perfection.
For mains the meat options stood out, so we went with the lamb with sunchokes and the braised short ribs with cauliflower. Crispy fried Brussels sprouts with truffle dressing and mashed potatoes rounded off the selection. Each bite had us gushing about how absolutely delicious it was. Every ingredient was prepared expertly – the lamb was rare and juicy, the short rib had that melting layer of fat infiltrating the rest of the meat. The vegetables are just as tasty and featured in more than one preparation on each plate.
For dessert the cornflakes, milk and honey is a must – it will transport you to your childhood breakfasts in the best possible way. It’s the perfect way to conclude a meal that’s filled with clever surprises and mouthful after mouthful of pure food joy!
