The ritual of Chinese dining is almost therapeutic, from the extensive tea menu – each variety boasting special health benefits – to the gentle progression of courses. The interior of Shang Palace also adds to the soothing feeling, it’s simple and neutral-coloured with pops of signature red and the service is attentive, but not overly so.

Ease into the culinary proceedings withsome dumplings, there’s a wide variety and we sample the shrimp which is incredibly juicy and generously seasoned. Soup in a meal of this style is a given and the fish maw with mushrooms and finely minced chicken is smooth and glossy and packed with flavour spoonful after spoonful. The spicy Sichuan scallops have just the right amount of heat so as not to overwhelm the subtle scallops and the fresh bite of the broccoli is a wonderful play of textures. The medium-cooked bites of beef tenderloin are coated in a black pepper sauce with the ideal consistency – no unpleasantly large peppercorns or sticky corn starch here. You’ll soon find your chopsticks make light work of the tender morsels. The fruit-based desserts provide a naturally sweet, palate-cleansing end to a meal that feeds all the senses.
