Despite the fishy-sounding name, Seafire is actually a carnivore’s delight – right down to serving its own specially bred beef. Produced in collaboration with the Australian Agriculture Company, Atlantis Cattle are raised on lush pastures in Queensland, and 300 days before slaughter are fed a mix of hay, barley, corn and essential seeds, which is said to perfect the marbling of the beef, giving the meat its flavour.
It sounds very scientific, but the result is nothing but pure and simple goodness. The beef carpaccio has a soft, velvety texture, complemented perfectly by the sharp tang of porcini mushrooms, while the fillet steak – perfectly cooked to medium at our waiter’s suggestion – is up there with one of the best we’ve ever had. The béarnaise sauce was indulgently buttery, but unnecessary, we felt, with such a fine cut of meat.
Vegetarians and pescatarians need not despair; there are plenty of non-meaty options on the menu. The lobster linguine delivered al dente twists of freshly-made pasta with an entire tail (de-shelled) perched invitingly on top. A creamy but not overpoweringly rich sauce brought the dish together. A sweet ending – the apple tart – was as visually appealing as it was delicious. Pieces of the fruit were artfully arranged in French fashion and baked to order – a high note to end an exceptional (albeit generously portioned) meal.
