North Indian cuisine can be a tricky affair – the curries and tikkas may either turn out to be too greasy with rich gravy and richer spices or they may be overcooked and over-grilled killing the flavour of the original ingredients. Patiala is a rare instance of a restaurant that gets the balance just right. Chef Sanjay Bahl’s dishes are flavourful and robust, bringing out the essence of Punjab but never going overboard with the masalas. The quail kabab and chicken tikka chaat is a fine example; where the dressing on the grilled meat  has a mix of tangy mango chutney, sweetened dates and crunchy apples. As is the classic gosht rogan josh which stays true to the traditional recipe yet does not feel heavy on the palate. It’s a pity you can’t take in the views of the Burj as you sip some excellent bespoke cocktails at the Patiala bar but the royal, purple-dominated interiors, reminiscent of Indian palaces along with the elaborate menu packed with delightful tawa dishes, breads and desserts more than make up for it.
