Restaurant review: Paru, Bluewaters Dubai
Celebrity chef Akira Back’s current hometown is Las Vegas, so it’s no wonder his latest outpost – his second in Dubai, named after a pearl – is perched on a prime seventh floor spot overlooking Ain Dubai and the marina skyline at the Caesars Resort on Bluewaters Island.
Back, a Michelin-starred culinary wizard, is known for innovatively blending his native Korean and modern Japanese flavours, but in this space the focus is definitely on the latter.
Paru encompasses two terraces and a sleek main restaurant with a sushi bar and an in-house DJ. The extensive menu has something for everyone; purists will be thrilled to see slivers of fresh sashimi, beef tataki and traditional sushi whilst those after a more modern twist will find wagyu beef and foie gras-topped ‘Harmony’ maki rolls, lobster tacos and scallops with asparagas and soya truffle butter.
Eschewing raw plates? You’ll be spoilt for choice with cooked options: punchy black pepper rib-eye, Jidori chicken, rock shrimp tempura and melt-in-the-mouth black cod, all spot-on when it comes to flavour.
If you can’t decide on dessert – the coconut mochi was our top pick – the platter will provide a serious Insta-worthy moment. An extensive drinks menu showcases both mixed drinks and mocktails you’ll want to work your way through.
A special mention must also be made of the staff who took the time to perfect each table’s order, advising on dishes and making expert recommendations.
