As the name suggests, Nomad wanders... the restaurant travels between continents picking up signature flavours and staple ingredients. When it returns to the melting pot that is Dubai, the talented chef leading the way pulls this myriad of influences into a coherent menu that surprises and satisfies. An apt illustration is the Osaka beef carpaccio presented with hot spring onion-infused oil and addictive ponzu sauce. A winner for sushi over is the spicy yuzu salmon maki roll with flavours of citrus and subtle chilli heat providing an enjoyable contrast of tastes. For mains, the Thai curries – red and green – master that delicate balance of sweet, sour, salty and spicy that the cuisine is famous for. The robust duck meat stands up against the bold spices of the red curry and it makes for a seriously fulfilling meal. Desserts don’t disappoint, the banana beignet cleverly carries through the fusion theme with tropical fruit meeting French technique in a delicious coupling. In the case of Nomad, there are definitely no cons to this well-executed fusion.
