Reflets Par Pierre Gagnaire, Intercontinental, Dubai Festival City
It’s the epitome of fine dining. As you would expect from the chef who has just been hailed the world’s best, this is where the long forgotten era of uber posh dining is very much alive and kicking. If you’re looking to impress future in-laws, this is a perfect venue.
It’s beautifully feminine. Decked out in shades of pinks and purples, you can expect the fairer sex to be romanced by the magic of childhood jewellery boxes, where she’ll feel like the twirling ballerina.
It’s a small but perfectly formed menu. While it incorporates safe staples such as chicken and fish, more adventurous types should try the roasted royal pigeon, for its meticulous precision of flavour profiles, that range from chocolate and pistachio to apricot and spring onion.
Expect molecular gastronomy of a different kind. There is no smoke from liquid nitrogen or any drama of dishes being prepared tableside, however, the method of scientific cooking is evident in every dish, from clear tomato jelly cubes, to desserts that appear to have layers suspended in mid-air.
