Recipe:Sesame Chicken Drumsticks with Pepper Pineapple Salsa
¾ cup fresh pineapple, diced
1⁄8 cup red peppers, finely chopped
1⁄8 cup green peppers, finely chopped
1 tbsp fresh coriander, finely chopped
1 tbsp fresh lime juice
¼ tsp red pepper flakes
¼ tsp lime zest
500g skin-on chicken drumsticks
¼ cup soy sauce
2 tbsp brown sugar
1 tbsp ginger
3 cloves garlic, minced
½ tsp black pepper
2 tbsp sesame seeds
1 Combine the pineapple, red and green peppers, coriander, lime juice, red pepper flakes and lime peel in a medium bowl.
2 Cover with clingfilm and set aside (this can be prepared up to 24 hours in advance when kept in a refrigerator).
3 Place the soy sauce, brown sugar, ginger, garlic and pepper in a 20cm x 4cm baking dish, and mix well.
4 Place the chicken in a baking dish and combine with the mixture.
5 Sprinkle with sesame seeds and refrigerate for at least four hours (for best results, leave overnight).
6 Turn once while marinating, adding more sesame seeds if needed.
7 Preheat the oven to 180C.
8 Cover the chicken baking dish with foil and bake for one hour, removing the foil during the last 20 minutes of baking.
9 Serve with the pepper pineapple salsa.
