RECIPE: Zesty Tomato, Mint and Quinoa Salad

RECIPE: Zesty Tomato, Mint and Quinoa Salad
Diet recipe!

Serves 2

300ml water
110g quinoa
25g sultanas or raisins
1 pinch salt
1 medium tomato, diced
½ medium onion, minced
5 radishes, quartered
¼ cucumber, diced
1 tbsp flaked almonds, toasted
2 tbsp chopped fresh mint
1 tbsp chopped fresh parsley
½ tsp ground cumin
2 tbsp lime juice
1 tbsp sesame oil
Salt, to taste

1. Bring the water to the boil in a small saucepan. Pour in quinoa, raisins and a pinch of salt. Cover, and let simmer for 12 to 15 minutes, then remove from heat, and allow to cool to room temperature.
2. Toss together the tomato, onion, radish, cucumber and almonds in a large bowl. Stir in the cooled quinoa, then season with mint, parsley, cumin, lime juice, sesame oil and salt. Chill for 1 to 2 hours before serving.
