Recipe: Zesty Chicken
Mediterranean Chicken Burger with Feta Cheese, Spinach and Tomato Salsa

160 g Fresh chopped tomato
20 g Capsicum, green
10 g Onion
½ g Garlic
1 g Coriander leaves
160 g Bun, whole-wheat
360 g Chicken breast, minced
32 g Onion
120 g Spinach leaves
100 g Feta cheese, low fat
380 g Potato
1 g Dry thyme
Lemon, Salt, Black Pepper to taste

For the Tomato Salsa:
1. Chop the onion, garlic, green capsicum & coriander leaves, add the chopped peeled tomato
2. Add salt, pepper & seasoning
3. Add lemon juice & olive oil altogether and mix well. Set aside and keep in the fridge
For the Chicken Patty
1. Using a mincing machine, mince the chicken breast with fresh spinach, salt, white pepper and black pepper
2. Add lemon juice to the chicken patty mixture
3. Make the mixture into four round thin patties, grill it until it is well done
Serving Instructions:
• Cut the burger bun in the middle
• Crumble the feta cheese and place it in the bun with some spinach leaves, then add the cooked chicken patty on top of the cheese within the bun
• Serve the roasted potatoes on the side, with tomato salsa. Enjoy!
