3 stalks celery, chopped
4 cups watermelon cubes, chopped
2 garlic cloves, finely chopped
6 to 8 spring onions, (white part only), chopped
120g mozzarella cheese, cut into small cubes
1 cup olive oil
1 cup balsamic vinegar
1 tbsp dried oregano
2 tbsp fresh basil leaves
Salt and pepper, to taste
1 Place the watermelon, celery, garlic, spring onions and mozzarella in a bowl. Toss to combine. Set aside.
2 Place the oil and vinegar in a sealable container. Add seasoning to taste and shake thoroughly to combine.
3 Pour the dressing over the salad and serve.
