RECIPE: Traditional Maldivian Fish Curry
500g fresh tuna
2 medium onions, finely sliced
2 fresh tomatoes, diced
300ml coconut milk
1 tsp fish curry powder
½ tsp salt
A generous pinch of curry leaves
1½ tsp ginger garlic paste
1 Heat the oil in a pan over a medium-high heat.
2 Add the onions, tomatoes, ginger garlic paste, salt, curry leaves and fish curry powder. Sauté until fragrant.
3 Add the coconut milk and reduce the heat to low.
4 Add the fish and cook until done.
5 Serve hot with basmati rice.
