Recipe: Tarte Tatin with Garlic and Sweet Onions
Makes 1, 22CM DIAMETER TART
Butter, for greasing
2 tbsp olive oil
4 mild red onions, cut into thin wedges
6-8 cloves garlic, roughly chopped
3-4 sprigs thyme, cut into smaller pieces
75ml balsamic vinegar
1 pinch brown sugar
1 packet (275g) ready-rolled puff pastry
1 Heat the oven to 180C.
2 Grease a tart tin (or a cast iron frying pan) with butter.
3 Heat the oil in a frying pan and gently fry the onions, stirring occasionally, for about five minutes.
4 Add the garlic, thyme and vinegar.
5 Simmer gently for around five minutes more, then season to taste with salt, ground black pepper and sugar.
6 Transfer the onions to the tin.
7 Unroll the pastry and cut out a circle about 5cm larger than the tin (27cm in diameter).
8 Place this on top of the onions and press down well into the tin around the edge.
9 Bake in the oven for about 25 minutes or until the pastry is golden brown.
10 Turn the tart out of the tin and ideally serve hot, with a leaf salad.
