RECIPE: Strawberry Chicken Salad with Warm Citrus Dressing

INGREDIENTS

500g skinless, boneless chicken breast 
400ml chicken stock
2 ½ cups strawberries
1/³cup orange juice
2 tbsp olive oil
2 tsp lemon zest
1 tbsp lemon juice
1 tsp sugar
½ tsp chilli powder
¼ tsp salt
¼ tsp black pepper
6 cups green leaves, such as torn spinach, watercress and rocket
¼ cup chopped walnuts, toasted

METHOD
1 Sprinkle the chicken breast lightly with salt and pepper.
2 Pour the chicken stock into a large saucepan and add chicken.
3 Bring to a boil and then reduce the heat to low.
4 Cover and simmer for 15 to 20 minutes, or until chicken is tender and no longer pink.
5 Remove the chicken from the stock with a slotted spoon and cool slightly.
6 Meanwhile, in a blender or food processor, combine ½ cup of the strawberries, the orange juice, olive oil, lemon zest, lemon juice, sugar, chilli powder, salt, and black pepper. Blend until smooth.
7 Transfer the mixture to a small saucepan. Bring to a rolling boil, lower the heat and then simmer, uncovered, for about 5 minutes, stirring occasionally.
8 Thinly slice the chicken breasts.
9 In a large bowl, toss together the salad greens, the remaining strawberries, and the chicken.
10 To serve, drizzle warm dressing over salad. Sprinkle with walnuts.
