Recipe: Strawberry and Basil Drinking Vinegar

Known as a 'shrub' this is a unique thirst quencher

Recipe: Strawberry and Basil Drinking Vinegar

1 cup strawberries
¼ cup basil
1 cup vinegar (e.g. apple cider, distilled white, any type you like)
½ cup sugar

1 Slightly crush the strawberries in a bowl.
2 Add the sugar to the strawberries and gently mix to incorporate.
3 Cover the bowl and leave in the refrigerator, for at least two hours.
4 When the appearance of the strawberries is surrounded by juice and syrup, strain the mixture through a sieve, pushing the fruit gently, without adding the pulp to the mix.
5 Scoop up any remaining sugar that has settled at the bottom of the bowl and add it to the mixture.
6 Using a pestle and mortar, pound the basil leaves until the aroma is released.
7 Add the crushed basil to the strawberry mix.
8 Top with the vinegar and transfer the mixture to a large jar and refrigerate, shaking periodically until all the sugar dissolves. Enjoy!
