RECIPE: Spicy Passion Fruit Glazed Sesame Prawn Herb Salad
½ cup water
½ cup sugar
4 passion fruits
2 tbsp fresh lime juice
1 tsp soy sauce
½ tsp crushed red chilli flakes
¼ tsp salt
32 large prawns
2 tbsp toasted sesame seeds
A bunch of parsley, finely chopped
A bunch of coriander, finely chopped
A bunch of mint, finely chopped
FOR THE PASSION FRUIT CREAM
4 passion fruits
½ cup double cream
Salt and pepper to taste
1 Begin making the topping by removing the pulp from the passion fruits.
2 Combine with the cream and whip using an electric hand whisk until soft peaks form.
3 Season to taste, cover and leave in the refrigerator until ready to use.
4 Prepare the prawns by bringing the water and sugar to a boil in a small saucepan, stirring until the sugar dissolves.
5 Add the passion fruit pulp, stirring well and cook for one minute.
6 Remove from the heat and allow to cool for 15 minutes.
7 Strain the passion fruit mixture through a sieve into a large bowl. Discard the seeds.
8 Add the lime juice, soy sauce, red chilli flakes and salt, stirring well.
9 Set ½ cup of the passion fruit mixture aside.
10 Add the prawns to the remaining mixture and toss well to coat. Cover and refrigerate for 15 minutes.
11 Set your grill to a medium high heat.
12 Thread three or four prawns onto skewers and place them on the grill rack.
13 Grill for two minutes on each side, or until done, basting frequently with the reserved ½ cup passion fruit mixture.
14 Take four glasses, filling ½ tbsp toasted sesame seeds in each.
15 Add a layer of the mixed chopped parsley, coriander and mint.
16 Add a layer of the cooked prawns.
17 Top with a spoonful of the savoury passion fruit cream and serve.
