Recipe: Smoked Salmon, Mozzarella and Guacamole Lasagne
A summery lasagne that doesn’t require any baking time
8 egg lasagne sheets
300g fresh mozzarella, sliced or torn
500g smoked salmon
A handful of basil, to garnish
FOR THE GUACAMOLE
1 small yellow onion, roughly chopped
1 green chili, chopped
½ cup coriander leaves, finely chopped, divided
2 tsp salt
4 ripe avocados
2 tbsp fresh lime juice
1 Make the guacamole by placing the onion, chilli, half the coriander leaves and salt and 1 tbsp lime juice in a food processor or blender and process until smooth paste is formed, scraping down the sides as necessary.
2 Split each avocado in half, discard the pits, and spoon out flesh into a medium bowl.
3 Roughly mash with a stiff whisk.
4 Add the onion and chilli puree and the remaining coriander leaves.
5 Fold to combine. Season to taste with more salt and the remaining lime juice. Set aside.
6 Cook the lasagne sheets as per the package instructions. Drain.
7 Place some guacamole on four plates
8 Top with a lasagne sheet.
9 Add a few slices of mozzarella.
10 Add another layer of guacamole.
11 Repeat the layering twice, then top with remaining noodles and a generous amount of smoked salmon.
12 Garnish with basil and serve.
