RECIPE: Seafood Salad
1 red onion, peeled and sliced
1 red or yellow pepper, thinly sliced
1 stick of celery, peeled and cut into matchsticks
2 tbsp parsley, chopped
2 tbsp basil, shredded
1 clove of garlic, minced
½ lemon, zest and juice
1 can cannellini beans, drained and rinsed
3 to 4 tbsp olive oil
12 large prawns, cooked and peeled
1 jar of cooked mussels, washed
1 pack of squid rings (2 large tubes)
Salt and black pepper, to taste
1. Cook the squid rings in boiling salted water for 1 to 2 minutes.
2. Mix all the ingredients in a bowl and serve with your favourite bread.
For extra ‘wow factor’ top with a tbsp each of lemon zest, chopped parsley and dried bread crumbs mixed together.
