RECIPE: Salmon Cakes

Salmon Cake


Serves 2

Full of omega 3 and 6, these taste great and do wonders for your skin 


3 tbsp light mayonnaise
2 tsp lemon juice
10g green onion, cut on the bias 
60g red pepper
2 tsp Dijon mustard
¼ tsp cayenne pepper
60g bread crumbs
90ml egg white
1 tsp salt
1 tsp white pepper
120g spinach, frozen
453g salmon, roughly chopped


 Place all ingredients in a blender and pulse until everything is mixed well. Form the mixture into patties of about 150g each.

 Spray a flat grill or pan with nonstick spray and cook the cakes until golden brown on each side. Serve with salad.
