4 cups precooked white long grain or brown rice
1 cup cooked mixed vegetables (peas and corn)
1 cup cooked broccoli florets
1 cup cooked cauliflower florets
2 baked salmon fillets, large chunks
A drizzle olive oil
Salt and pepper, to taste
1. Mix the rice and veggies together, drizzle with olive oil and season to taste. Divide across 4 plates and top with the chunks of salmon.
