Recipe: Saladicious Summer Bean Mixed Salad

High in fibre and lean protein, this is a perfect post-workout meal


60g mixed lettuce
100g mixed beans
85g palm hearts, chopped
3 tbsp avocado, chopped
220g chicken skewers (marinated in yoghurt and mustard and left overnight)
1 lemon wedge
2 tbsp olive oil
300ml whole milk yoghurt
4 tbsp English whole-grain mustard
The juice of 1 lemon

1 Combine all the ingredients for the marinade.
2 Add the chicken and coat thoroughly. Cover and place in the refrigerator overnight.
3 Preheat the oven to 190C.
4 Brush the skewers with a little olive oil and place on a barbecue or under a hot grill for at least seven minutes.
5 Transfer the skewers to the oven and cook for a further four minutes.
6 Place the lettuce on a plate. Top with the mixed beans, avocado and palm hearts.
7 Remove the skewers from the oven and place on top. Drizzle with olive oil and serve.
