Recipe: Rainbow Veggie Flatbread Pizza
SERVES 2
INGREDIENTS
2 pieces stone baked naan
½ cup pizza sauce
½ cup shredded mozzarella cheese
4 cups colourful vegetables, chopped (try broccoli florets, green peppers, yellow peppers, orange peppers, cherry tomatoes, red onions and purple potatoes)
2 tsp olive oil
1 tsp Italian seasoning
Grated parmesan cheese (optional)
Red chilli flakes (optional)
METHOD
1 Preheat the oven to 220C.
2 Lay both pieces of naan in a single layer on a large baking sheet.
3 Divide the pizza sauce between the two pieces of naan, using a spoon to smooth.
4 Sprinkle the mozzarella on top of the pizza sauce.
5 Layer the vegetables in a rainbow pattern on top of the cheese.
6 Drizzle or mist each pizza with a bit of olive oil, then sprinkle each pizza with the Italian seasoning.
7 Bake for about 20 minutes, or until the vegetables are cooked and the crust is slightly golden.
8 Remove the pizzas from oven, and sprinkle with parmesan and red chilli flakes if desired. Slice and serve warm.
