Recipe: Rainbow Mocktails

A super easy summer cooler

This simple rainbow concoction tastes just as beautiful as it looks!

1 refrigerated bottle white grape juice

3 tbsp granulated sugar or honey

2 tbsp lime juice

½ cup ginger ale 

FOR THE FRUIT RAINBOW (You’ll need 8 cups)
Red: strawberries, raspberries, pomegranates

Orange: mandarin oranges, any other kind of orange/clementine wedges, cantaloupe

Yellow: fresh pineapple

Green: kiwi, honeydew, green grapes

Blue: blueberries

Purple: red grapes, blackberries

1 In a large jug, combine the white grape juice, sugar or honey and lime juice, and stir until combined.

2 Add fruit to your serving glasses.

3 Pour over the liquid mix until the fruit is covered. 

4 Refrigerate the drinks for 15 minutes to let the flavours combine. Top with a splash of ginger ale and serve.
