Recipe: Rainbow Cake Jars

Recipe: Rainbow Cake Jars

SERVES 3

INGREDIENTS
1 box white cake mix made according to package instructions
Neon food colouring in pink, yellow, green, turquoise and purple
3 480ml mason jars
1 can vanilla icing
Rainbow sprinkles

METHOD
1 Preheat oven to 180C.
2 Spray the inside of each jar thoroughly with non-stick cooking spray. Set aside.
3 Scoop about ½ cup of the cake batter into five small bowls. Tint each bowl of cake batter with the food colouring until vibrant.
4 Spoon about 3 tablespoons of the purple batter into the bottom of each jar.  
5 Spoon equal amounts of turquoise batter, then green, yellow and pink.  Place the jars in a shallow baking dish, adding about ½ cm water to the baking dish itself. Bake for 40 minutes.
6 Remove the jars and allow to cool completely before scooping a small portion from the top of your cake and adding a hefty dollop of vanilla buttercream to the top. Add your rainbow sprinkles and serve.
