1 packet microwaveable Jasmine rice
½ cup frozen pea and sweetcorn mix
1 tin white crab meat, drained and flaked
2 cloves garlic, finely chopped
2 eggs, beaten
2 tbsp vegetable oil
Soy sauce, to taste
Salt and white pepper, to taste
1 spring onion, finely chopped
Microwave the rice according to the instructions.
In a wok over a medium-high heat add the oil and stir-fry the garlic, crab meat and frozen veggies until the veggies are cooked.
Add in the rice and mix through. Season with salt, pepper and soy sauce.
Push the rice mixture to the outside edges of the wok and drizzle in a little more oil. Drop the eggs into the centre of the wok and stir-fry until lightly browned. Mix everything together, adjust the seasoning and sprinkle with chopped spring onion to serve.
