RECIPE: Provolone Cheese and Aubergine Flan
12 slices Provolone cheese
2 cloves garlic, crushed
2 tbsp extra virgin olive oil
Salt and pepper to taste
1 Preheat the oven to 150C.
2 Wash and slice the aubergines and allow them to marinate in a bowl with 2 tbsp olive oil, the garlic, salt and pepper.
3 Create towers on a baking sheet using alternate slices of Provolone cheese and aubergine.
4 Bake in the oven for 20 minutes and serve.
