Recipe: Pizza Meatloaf
1kg ground turkey or beef
1 egg, lightly beaten
1 ½ cups seasoned breadcrumbs
1 can chopped ripe olives, drained
1 can mushroom stems and pieces, drained
1 cup shredded low-fat mozzarella cheese
1 small green pepper, chopped
1 small onion, chopped
2 tbsp onion soup mix
1 cup pizza sauce, divided
¼ cup grated Parmesan cheese
1 Preheat the oven to 180C.
2 In a large bowl, combine the egg, breadcrumbs, olives, mushrooms, mozzarella cheese, pepper, onion, soup mix and ½ cup pizza sauce.
3 Crumble the beef over the mixture and mix well.
4 Shape into a 25cm x 15cm rectangle and place in a greased 38cm x 25cm baking pan.
5 Spoon the remaining pizza sauce over top.
6 Bake, uncovered, for 45 minutes.
7 Sprinkle with Parmesan cheese.
8 Bake for 10 to 15 minutes longer, until no pink remains in the centre.
9 Allow to stand for 10 minutes before slicing.
