RECIPE: Pan Fried Chilli Prawns

A quick and spicy dish for seafood fans

½ cup tomato ketchup

4 tbsp soy sauce

2 tbsp sugar

4 tsp cornflour


4 tbsp oil

2 level tbsp garlic purée

1 level tbsp ginger purée

6 medium red chillies, chopped

600g prawns, tail-on and cleaned

400ml boiling water

2 tbsp fresh lime juice

2 spring onions, chopped

A handful of coriander leaves, chopped


1 Mix all the ingredients for the sauce together in a bowl and leave aside.

2 Heat the oil for the prawns in a wok or large frying pan over a medium-high heat. 

3 Toss in the garlic, ginger and chillies and stir-fry for about 30 seconds, until the chillies have darkened. 

4 Add the prawns and continue frying for about 3-4 minutes.

5 Stir in the sauce, bring to a simmer and pour in the boiling water. 

6 Add the lime juice, spring onions and coriander leaves.

7 Serve with rice or noodles.
