2 cups sugar
3 cups flour
1 cup sunflower oil
A few drops of orange flavouring
1½ cups Fanta
2 tsp baking soda
1 tsp vanilla extract
1 can sliced peaches, drained
1 cup sour cream
1 cup whipping cream
1⁄3 cup sifted icing sugar
Orange zest, to garnish
1 Preheat the oven to 180C.
2 Combine the eggs, sugar, vanilla and oil in a bowl using an electric hand mixer.
3 Add the flour and the Fanta and mix well until you achieve a smooth batter.
4 Once combined, mix in the baking soda then immediately transfer to an ungreased 23 x 8cm pan.
5 Bake for 30 to 45 minutes until golden brown and a toothpick inserted into the centre comes out clean.
6 Remove and allow to cool.
7 Make the icing by whipping the cream until stiff.
8 Fold in the sour cream and icing sugar.
9 Cut the cooled cake in half horizontally.
10 Layer the peach slices on the bottom half.
11 Top with half the icing, spreading evenly.
12 Place the other half of the cake on top and use the remaining icing to cover the cake completely.
13 Garnish with a little orange zest and chill in the refrigerator until required.
