Recipe: Olive and Mushroom Bread
MAKES 2 SMALL LOAVES
Basic bread dough
100g Kalamata olives
250g mushrooms, chopped and lightly fried
A few sprigs of thyme
A sprinkling of coarse sea salt
1 Preheat oven to 190C.
2 Divide a batch of prepared and risen basic bread dough in half.
3 Shape into two oval loaves and place on greased baking trays.
4 Brush with olive oil and scatter with pitted and halved Kalamata olives and lightly fried mushrooms.
5 Add some fresh thyme and a little coarse salt and allow to rise again.
6 Bake until golden and cooked through.
