Recipe: Nut and Fruit Muesli

A yummy breakfast that will keep you full until lunchtime

Recipe: Nut and Fruit Muesli


650g rolled oats
80g wheatgerm
100g coarsely desiccated coconut
150g almonds, roughly chopped
125g cashew nuts, roughly chopped
130ml honey
80ml sunflower oil
130ml apple juice
50g raisins
80g sultanas
150g Turkish apricots, chopped
150g dried pear, chopped

1 Preheat oven to 180C.
2 Mix the oats, wheatgerm, coconut, almonds and cashew nuts together in a large bowl.
3 Mix the honey, oil and apple juice together and drizzle it over the oats and nut mixture.
4 Toss together until everything is well coated and there are no dry areas.
5 Transfer the mixture into two large baking trays and bake in the oven for 35 minutes.
6 Toss the mixture around every 10 minutes while baking.
7 When golden, remove from the oven and allow to cool down to room temperature.
8 Add the dried fruit and mix together well.
9 Store in an airtight container and serve with yoghurt, milk and fresh fruit.
