RECIPE: Lentil Salad

A quick and easy salad with a fruity zing

400g cooked lentils
400g pomegranate seeds
2 passion fruits
Whole sea salt, to taste
A splash of extra-virgin olive oil
The juice of ½ a lemon
4 tbsp apple cider vinega
2 tsp cumin powder
2 tsp coriander powder
A large handful of parsley, chopped

1 Combine the lentils, pomegranate and passion fruit in a salad bowll

2 Add the salt, olive oil, lemon juice and vinegar and toss to coat.

3 Stir in the cumin and coriander and finish with the chopped parsley.

4 Toss again and serve at room temperature.
