Recipe: Kit Kats
MAKES 15 BARS
1 box square butter crackers
1 cup butter
2 cups graham cracker crumbs
1 cup firmly packed brown sugar
½ cup white sugar
½ cup whole milk
2 ¼ cups milk chocolate chips
1 ½ cups butterscotch chips
1 cup peanut butter chips
1 Melt the chips together in a bowl set over a pan of boiling water, being mindful that the bowl does not touch the water, until combined, smooth and creamy.
2 Spray a baking pan with cooking oil and add a thin layer of the melted chocolate.
3 Lay the crackers on top, edge-to-edge.
4 Melt the butter in a pan and stir in the milk. Add the sugars and bring to the boil.
5 Stir in the graham cracker crumbs and cook for 5 minutes, stirring constantly.
6 Pour about half of the filling over the layer of crackers.
7 Add another thin layer of melted chocolate, then a layer of crackers and the graham cracker crumbs.
8 Repeat until you have four layers, and then add a final layer of chocolate on top (don’t use it all, reserve some for the final coating).
9 Cover the dish with clingfilm and place in the refrigerator to firm up.
10 Allow the dish to come to room temperature, then cut up the pan of crackers into sticks.
11 Line a larger dish with clingfilm. Add a layer of chocolate.
12 Arrange the bars you cut apart on top of the chocolate layer.
13 Coat the bars in another layer of chocolate, making sure to cover the tops and sides.
14 Once they're set, break them apart into sticks before serving.
