Recipe: How to Make Pakoras

These deep-fried beauties are perfect snacks for last-minute guests!
2 cups gram flour (besan)
Vegetables of your choice, such as onions, potatoes and aubergines, sliced or florets of cauliflower 
1 tsp of salt
2 tsp of garam masala
1 tsp of turmeric
2 chillies, finely chopped
1 tbsp garlic paste
A handful of fresh coriander, chopped
1 tsp of cumin seeds
½ tsp of red chilli powder
Oil for deep frying
1. Prepare all your ingredients
2. Place the gram flour into a bowl with the salt and stir to combine
3. Add the garlic paste, coriander leaves and all your dry spices
4. Add enough water to make a batter of a medium consistency
5. Ad the oil to a deep pan and heat until a drop of batter dropped into the oil sizzles and comes to the surface within 20 seconds
6. Place your cut vegetables in batches to the bowl of batter, tossing to coat them evenly
7. Carefully transfer the battered vegetables to the pan of hot oil until golden and crisp
8. Remove the pakoras using a slotted spoon and drain on paper towels. Serve hot with chutney or sauce of your preference.
