RECIPE: Homemade Sausages for Halloween
500g minced lamb or chicken
1 clove garlic, finely chopped
100g finely chopped onion
1 tsp chopped fresh thyme
1 tsp chopped fresh rosemary
1 egg, beaten
Salt and pepper
2 tbsp olive oil for cooking
1 Place all ingredients into a large bowl.
2 Using your hands, mix all the ingredients together.
3 Season well with salt and pepper.
4 To test for seasoning roll 1 tsp of the mixture into a tiny sausage shape.
5 Warm the olive oil in a pan and sizzle the test sausage until cooked.
6 Cool and taste adding more salt and pepper as required.
7 Once the seasoning is correct use your hands to roll the remaining mixture into sausage shapes approximately 4cm long x 1.5cm in diameter.
8 Sizzle in batches in a frying pan set over a medium heat, turning sausages gently to ensure an even golden colour. This should take approximately 10 minutes.
9 Serve with monster mash decorated with cress hair, carrot eyes, olive teeth and eyebrows.
