Recipe: Hawaiian Gratinated Pineapple
½ cup sweetened desiccated coconut
½ cup crushed gingersnap biscuits
½ cup chopped macadamia nuts
½ cup sweetened condensed milk
1 large, ripe pineapple, leaves intact, halved lengthwise
1 Preheat the oven to 180C.
2 Stir together the coconut, gingersnap biscuits and macadamia nuts. Set aside.
3 Using a sharp knife, slice the pineapple in half with leaves intact.
4 Cut the core from each pineapple half and discard.
5 Arrange the pineapple halves skin-side down on a rimmed baking sheet.
6 Drizzle with half of the sweetened condensed milk.
7 Sprinkle with the coconut mixture.
8 Drizzle with the remaining sweetened condensed milk.
9 Bake for 10 to 16 minutes or until golden brown. The coconut and nuts should be browned well but not burned. Serve warm.
